Welcome back to another edition of What's for Dinner - a weekly menu planning series with inspiration from my Cocina to yours.
This week there was no menu plan in our house. Every once in a while (maybe every 4 to 6 weeks) I like to forego our weekly grocery shopping so I have a chance to use up all the fruits and veggies, along with any leftovers in my fridge and/or freezer. The results were a tasty mix of soups, pastas, and family favorites.
Our meals this week...
Sunday:
Pollo Dorado (take-out)
Monday:
Pork Florentine
One of the things in my fridge that I wanted to use up first was a bunch of spinach leftover from last week. With the pork cutlets Hubby picked up at the carnicerÃa (butcher shop), some Mexican crema, and parmesan cheese I ended up with a saucy Pork Florentine and served it over cooked spaghetti. Hope made a large pitcher of iced tea.

Wednesday:
Chicken Mole de Olla
My suegro loves Caldo de Pollo and I had some leftover enchilada sauce from the day before, so I made Mole de Olla and everyone was happy.
Thursday:
Homemade Spaghetti & Meatballs w/ Garlic Bread

This was the only meal on our menu plan for the week. It's one of Hope's favorites and it was the perfect way to use up my Homemade Tomato Salsa.

Meatball Minestrone
I made an extra batch of meatballs yesterday and used them to make this delicious soup that I've decided to call Kitchen Sink Minestrone because it had a little bit of everything: roasted poblano peppers, corn, spinach, macaroni, and the last of my huge batch of Homemade Tomato Salsa,

Saturday:
BLT's and Creamy Cauliflower Soup
The last thing left in my fridge to use up was half a head of a huge cauliflower. After a week of hearty meals, I was in the mood for something a little lighter so I made a creamy cauliflower soup and BLT's.
