Looking for menu planning inspiration? Every week I'm sharing our meals for the week in hopes that they'll give you some new ideas to add to your family's weekly menu plan.
This week we got back on schedule with our meal planning, although I did make a few changes at the beginning of the week to use up some leftovers from Jack and my suegro's birthday party on Sunday. But that's the great thing about menu planning. It's nice to have a plan to follow, but nothing is set in stone. You can make changes to your plan any day of the week. I know there are always times when maybe one week I was craving something with shrimp, so I add it to the next week's menu plan but when the time comes, I'm no longer in the mood for shrimp. Our meals this week...
Sunday
Birria
Jack (my youngest) and my suegro share the same birthday. On Sunday the family gathered to celebrate the birthday boys. (Jack turned 10 & my suegro turned 75.) For the grown-ups we had Birria (roasted lamb in a tomato salsa), and for the kiddies (who don't all like birria) we had pizza.
Monday
Lamb Burritos
Nick wanted burritos, and I wanted to use up the leftover kilo of roasted lamb.
Tuesday
Lamb Tacos
Yes, we STILL had leftover birria. (Note to self: Two kilos of birria is more than enough for our next family get together. Three kilos is way too much!) Well you know what they say... When in doubt as what to make with leftovers, make tacos!

Chicken Tinga Tostadas
Friday
Frijoles Puercos
This is one of Jack's favorite soups because it has some of his all-time favorite foods: beans, chorizo, and hot dogs.
