I was debating whether or not to share this week's menu as our meal plan went way off course and we ended up ordering take-out three days this week. Usually we try to order out only once a week. But sometimes you just can't help it because life happens. Do you ever have those kind of weeks?

Sunday
Sunday was one of those cold, dreary days where all any of us wanted to do was curl up on the couch and watch movies all day while it rained non-stop outside. It was perfect soup weather so I cooked up a HUGE pot of Cocido Rojo with all the works: Sopa de Fideo Seco and Nopales.
Monday
Cocido Rojo, again!
Monday was the first of many appointments my suegro had this week. This first appointment took a little longer than we expected. It was 5 hours in a very cold & drafty building. Thankfully we had plenty of Cocido leftover to help us warm up and get the feeling back in our hands and legs.
Tuesday
Pizza (take-out)
Another rainy day, and another appointment for my suegro. This time it was in the city, so I stayed home to wait for the kiddies to get home from school. Since it was Hope's first day of school after a long two-month winter break, we celebrated with pizza.
Wednesday
Mole Dulce w/ Mexican Rice & Nopales (cactus paddles)
With so much running around, my suegro was in the mood for a nice homecooked meal. I may or may not have accidentally added two disks of Mexican chocolate instead of just one. Oops! But I think it turned out okay as all of the kiddies said this was the best Mole Dulce I've ever made. Hmmm!

Thursday
It was no surprise this week that Hubby went back to asking for one of his two favorite meals this week. The kiddies and I are betting that he's going to request Potato Tacos (his other favorite meal) next week.
FRIDAY
Pollo Rostizado (take-out)
Final appointment of the week for my suegro. It was another long one, so we picked up a rotisserie chicken on our way home.
SATURDAY
Chinese take-out
Three days of take-out food isn't a lot, but with a family of 7 it can wreak havoc on our wallets. That's why next week I'm going back to our weekly meal plans. We haven't had this much take-out in like forever. Time to get back on schedule next week with our meal planning.
