After ordering take-out three times last week, I was determined to get back on schedule this week and stick to our plan. I'm happy to report that there were no surprises this week and everything went according to plan. Woo-hoo! To quote one of my grandpa's favorite TV shows, "I love it when a plan comes together!" (Bonus points for whoever can guess the TV show in the comments below.)

If getting back to our regular meal routine means ordering take-out on what's usually my day off from cooking and cleaning, then so be it. That is just one of many sacrifices I am willing to make for my family. ;)

Volcanes de Carne Asada (Carne Asada Tostadas)
If you've never heard of eating a volcan (volcano), let me just say that volcanes are awesome! And you are totally missing out. A volcán is a baked tortilla shell topped with lots of ooey, gooey melted cheese, carne asada, chopped onion and cilantro, your favorite salsa, and whatever else your heart desires. RiquÃsimo!

Molletes (Open-Faced Refried Bean Sandwiches)
Jack, my youngest and pickiest eater, can count his favorite foods on one hand: menudo, chorizo, french fries, hot dogs, and refried beans. (Refried beans being his ultimate favorite.) The only time he ever asks for seconds is if I've made him something with one of those five foods. No only did he request a second mollete, he also requested them for breakfast the next day.

ReplyDeleteI really like the carnitas tacos and would like to know what other ingredient you used? The looks as though you put a layer of mashed sweet potatoes and then the carnitas.
