What's for Dinner: Week 7

Welcome back to another edition of What's for Dinner, a weekly series with menu planning inspiration from my Cocina to yours.


After ordering take-out three times last week, I was determined to get back on schedule this week and stick to our plan. I'm happy to report that there were no surprises this week and everything went according to plan. Woo-hoo! To quote one of my grandpa's favorite TV shows, "I love it when a plan comes together!" (Bonus points for whoever can guess the TV show in the comments below.)

Our meals this week...   

Sunday
Grilled Chicken Burgers (take-out)

If getting back to our regular meal routine means ordering take-out on what's usually my day off from cooking and cleaning, then so be it. That is just one of many sacrifices I am willing to make for my family. ;)

Monday 
Volcanes de Carne Asada (Carne Asada Tostadas)

If you've never heard of eating a volcan (volcano), let me just say that volcanes are awesome! And you are totally missing out. A volcán is a baked tortilla shell topped with lots of ooey, gooey melted cheese, carne asada, chopped onion and cilantro, your favorite salsa, and whatever else your heart desires. Riquísimo!

Tuesday
Pork Chipotle Alfredo

Another of Hope's favorites. In case you haven't noticed, she LOVES pasta!

Wednesday
Salsa Verde Chicken Chili


Cold, gloomy days call for soup, and I had been craving this chili for a while now. I made a double batch of this chili to stock up on my freezer meals. (So far I only have one.)


Thursday
Molletes  (Open-Faced Refried Bean Sandwiches)


Jack, my youngest and pickiest eater, can count his favorite foods on one hand: menudo, chorizo, french fries, hot dogs, and refried beans. (Refried beans being his ultimate favorite.) The only time he ever asks for seconds is if I've made him something with one of those five foods. No only did he request a second mollete, he also requested them for breakfast the next day.


Friday
Shrimp Chow Mein


Cuaresma (Lent) starts next week, so I thought I'd get a head start on getting the family used to not eating meat on Fridays.


Saturday
Pork Carnitas, Frijoles Adobados, and Mexican Rice

Carnitas might not sound like your typical Valentine's Day meal, but it is if you spent the day with the family celebrating Hubby's aunt's 73rd birthday. (Warning: We have a TON of leftovers which you will see in next week's menu.)

  4. I really like the carnitas tacos and would like to know what other ingredient you used? The looks as though you put a layer of mashed sweet potatoes and then the carnitas.
