Spring has finally sprung in our small town and I am craving all things bright and cheery like fresh strawberries, mangoes, and guavas. Especially guavas! Now that the weather is starting to heat up, big breakfasts aren't that appealing to me. (For now.) Just give me a bowl of oatmeal and a couple slices of toast with Homemade Guava Jam and I'm a happy camper. (Along with a big cup of coffee or Café con Leche.)

Cooking this homemade Mermelada de Guayaba on the stove is the best natural air freshener that will fill your casa with a sweet, inviting aroma. And it's absolutely delicious! Spread your homemade guava jam on toast or flaky buttermilk biscuits, or use it as a filling for PB&J sandwiches, empanadas, and or tarts.

Mermelada de Guayaba 
(Homemade Guava Jam)

Ingredients:

  • 2 lbs. fresh guavas 
  • 3 cups granulated sugar
  • 1 teaspoon ground cinnamon 
  • 1/4 teaspoon salt 
  • Juice of 1 lime


Directions:
Cut guavas in half. Scoop out seeds. (Reserve seeds for Agua de Guayaba.) Roughly chop the guava shells. Combine the chopped guavas, granulated sugar, ground cinnamon, and salt in a large saucepan and bring to a boil over high heat. Reduce heat to low and let simmer, stirring occasionally, until the mixture has thickened into the consistency of a jam. Stir in the juice of one lime and let cook for one minute. Remove from heat and let cool completely. Refrigerate for 2 to 3 hours until completely chilled. Enjoy!
