Queso Fundido de Chorizo con Nopales {She Made/Ella Hace}

Are your ready for some football? Or better yet, are you ready some finger-lickin' good game day eats?! Then you are in the right place, because this month for She Made/Ella Hace my friend Heather, from All Roads Lead to the Kitchen are serving up super appetizers to enjoy while watching the big game. Heather is serving up Bacon-Wrapped Water Chestnuts, while I am sharing a delicious Queso Fundido de Chorizo con Nopales.


For those of you unfamiliar with queso fundido, simply translated it is baked melted cheese. Often referred to as Mexican fondue, queso fundido is traditionally served as an appetizer with totopos (tortilla chips), but it can also be served as a main dish served with warm corn tortillas. This queso fundido has a little bit of everything in the mix: chorizo, fresh chile peppers, nopales, and lots and lots of Mexican cheese.

Queso Fundido de Chorizo con Nopales

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 lb. Mexican chorizo, plastic casing removed 
  • 1/2 medium onion, finely chopped 
  • 2 banana peppers, finely chopped 
  • 1 clove garlic, minced 
  • 2 cups cooked nopales, diced 
  • 1/4 teaspoon ground cumin (optional) 
  • 1-1/2 cups queso fresco, crumbled 
  • 1-1/2 cups Oaxaca cheese, shredded 

Directions:
Preheat oven to 375°F. Heat the vegetable oil in a medium heat-proof or cast-iron skillet over medium-high heat. Add the chorizo and cook for 5 to 7 minutes until fully cooked. Stir in the onion, chopped peppers, garlic, and nopales; season with cumin, salt, and black pepper to taste. Continue to cook 2 to 3 minutes, stirring occasionally, until the onions turn translucent. Cover skillet and reduce heat to low; let simmer for 3 to 5 minutes.

Sprinkle the cheeses over the chorizo. Bake uncovered for 10 to 12 minutes until the cheese has melted completely. Remove from oven. Serve with tortilla chips or warm tortillas. Enjoy!

Tip: If making this while watching the big game, pop open a beer and add a splash or two (about 1/4 cup) of your favorite Mexican beer with the chopped veggies.
