Lime in the Coconut Margarita for #NationalMargaritaDay

I know I'm not the first blogger to point out that some foods and beverages bring certain tunes to mind. Like anytime I make something piña colada flavored, "The Escape Song" pops into my head... "Do you like piña coladas? And getting caught in the rain?" Or when I add red wine to anything, UB40's "Red, Red Wine" immediately comes to mind. Same thing happens every time I whip up these Margaritas de Coco (coconut margaritas). I add the tequila, orange liqueur, and shredded coconut to the blender, then when it comes time to squeeze in the fresh lime juice I can't help but sing, "You put the lime in the coconut, and drink 'em both up..."

I like my coconut margaritas a couple of ways. When making a frozen margarita, I like to rim the glasses with with either vanilla-flavored sugar or a cinnamon-sugar mixture. But for this coconut lime margarita on the rocks, I take flavor inspiration from one of our favorite snacks--fresh coconut con limón, sal, and chile--and rim the glasses with Tajín (a salty chile-lime powder). The light hint of salt and spice from the Tajín helps to offset the sweetness of the cream of coconut used to sweeten this margarita. I can't think of a tastier way to celebrate National Margarita Day.

Ingredients: 

  • Tajín 
  • Lime wedges 
  • 4 oz. tequila silver or blanco
  • 2 oz. orange-flavored liqueur (Grand Marnier, Cointreau or Licor 43)  
  • 2 oz. cream of coconut 
  • 1/4 cup sweetened shredded coconut
  • 4 oz. fresh lime juice
  • Coarse salt


Directions: 
Spread a thin layer of Tajín on a saucer. Moisten the rim of 2 chilled glasses with a lime wedge. Dip moistened rims in Tajín. Fill glasses with ice.

Combine tequila, orange-flavored liqueur, cream of coconut, shredded coconut, and lime juice in a blender cup; puree until smooth. Strain mixture into Tajín rimmed glasses. Top with a pinch of coarse salt. Salud! 


Tip: If you don't have Tajín seasoning on hand, simply rim the glasses with coarse salt or granulated sugar. 

Yields 2 margaritas
